Healthy Eating And Menu Planning
Before I start my post today, just let me say that it was in the mid 60's today in Indy. I sat on my screened in porch and drank my afternoon coffee in a short sleeved shirt. I've had my back door and my kitchen window open all day. Crazy, but I'll take it!
Today is the start of our healthy eating program. My husband Steve, was instructed to follow an insulin resistant diet. We are keeping it really simple. I have read two books, The Insulin Resistant Diet and The Schwarzbein Principle. I am combining what I've learned in both books for our plan.
We are counting carbs. With each meal we are allowed 30 grams of carbs but it must be paired with a healthy protein. For snacks we can have 15 grams of carbs as long at it's paired with a healthy protein. We aren't worrying about counting calories or fat. We are trying to eat only healthy fat. Of course this includes lots of vegetables.
The goal is to eat healthy whole grain gluten free carbs. So we are cutting out a lot of sugar. That doesn't mean I won't sneak a cookie every now and then for one of the carb snacks! I am on a quest to find a good, healthy, gluten free cookie recipe made with agave syrup.
We are also exercising which I've been doing for a while anyway. I do cardio about 5 days a week and 3 of those days I also have a toning workout with free weights. Hubby just has to start doing something! Anything! He has a cardio goal of 3 days a week.
I went to Half Price Books and picked up a couple South Beach Diet cookbooks. They are great! So many of the recipes are already gluten free and of course they are with healthy carbs.
Another goal of mine is to convert my freezer cooking recipes to gluten free. I have been wanting to do this for months, but with the holidays it's just been too busy. I have found very little convenience food that is gluten free. Sometimes I'm just too tired to cook and would love to be able to pull out a tv dinner or something. So I'll have to make my own.
I would love to be organized enough to make a weekly menu. I'm going to give it a shot. I'm really a cook by the seat of my pants kind of gal when it comes to cooking. I am not very good at planning meals. But last week I did make out a menu for this week and the last two nights have been really great because dinner was there on paper! No standing with the fridge door open hoping something will jump out at me. No walking around the kitchen talking to myself hoping an idea will come. It was there on the paper! So, I'm gonna try to keep up with this.
Here are my menu's for the week. It's in no particular order or night. You know if you plan the chicken on Monday and maybe you would rather have the fish on Monday. So I just planed 6 meals per week and each night I'll decide which one I'm in the mood for. I'm leaving the seventh night open. I have to have at least one night to fly by the seat of my pants in the kitchen!
Balsamic Glazed Salmon
Brown rice
Frozen veggies
Mahi Mahi with Parmesan Caesar Glaze
Brown rice with almonds and onions
Stir fried broccoli and carrots
Chinese style steamed chicken
Brown rice
Veggies
Grilled chicken with garlic and olives
Baked potatoes
Green beans
Baked Pesto Chicken
Roasted sweet potatoes and onions
Salad
Pork Satay
Brown rice
Asian slaw
Mahi Mahi with Parmesan Caesar Glaze

I love this recipe. I've made it about three times now. It came from a magazine I just discover called Fresh. It's by the makers of Fine Cooking. You can make this with any kind of white fish. The original recipe calls for flounder, but I have made it with both talapia and mahi mahi. I think it would be just as good with chicken too! The recipe calls for grated lemon and lemon juice. I have made it with lime twice now and I prefer it to the lemon, but tonight I used lemon. The original recipe calls for rolling the fish, but I just lay it flat and broil it.
8 skinless white fish fillets
1/3 cup mayonnaise (not miracle whip!)
1/2 cup Parmesan cheese grated
1 1/2 tablespoon grated lemon zest
1 tablespoon lemon juice
1/2 teaspoon Worcestershire sauce
1 small clove garlic crushed
2 tablespoon of chopped parsley or cilantro
In your oven, broil the fish several minutes on each side according to what type of fish you use and the thickness of that fish. While it's broiling, mix together the remaining ingredients. When your fish is finished cooking, take it out and spread the top of each fillet with the Caesar glaze. Place your fish back in the oven and broil until the glaze is browned and bubbling. Keep a close eye on it as it only takes a couple minutes to achieve this. Plate this on a bed of rice and sprinkle with fresh parsley.
And just so you'll know, I'm craving chocolate something fierce right now!

Meet my new baby.....Zoey!
I'm so excited! She arrived yesterday! I've made two loaves in her already. The first loaf was the Featherweight bread from Bette Hagman's bread book. Today I used the recipe from Jen's family recipes on Delphi, Tom's light bread. Both were good, but my favorite is still Breads from Anna. I'm trying that one tomorrow in Zoey. I've made it many times in the oven and love it. I think it will be great in Zo! We've been eating sandwiches all weekend!

My First Post of the New Year
I hope everyone has had a great Christmas and New Year. I had my family on Christmas day and really enjoyed my time with them. My mom and I have a New Years day tradition. We start the first day of every year at the antique malls. I picked her up at around 11:00 am and we spent 2 hours at the first mall. Then we went back to my mom's where she had a wonderful gluten free lunch of salmon rice salad and tomato soup. Of course we had chocolate and coffee for dessert. We proceeded to spend the afternoon at the second antique mall and afterwards returned to my house for a New Years day dinner.
I could kick myself for not taking pictures of our dinner. But I think I had antique mall-itis! For Christmas, my husband got me an indoor grill. Yippee! I can grill all winter! I had purchased some lamb chops. They are so simple to cook. You need to slice them into chops between the bones, about 3/4"' thick. I marinaded them for about 30 minutes in olive oil, garlic, rosemary, salt and pepper. Grill or pan fry for about 3 minutes each side. They are best when they are a little on the rare side. I served mine with baked potatoes and steamed broccoli.
Lamb chops seem a little pricey if you are on a budget. But if you price them in a restaurant, they can be around $30.00 a plate and up. I paid $19.00 at Sam's club and got 15 chops. That fed four of us very well. All of us ate for around $25.00. That was a bargain! And lamb chops are to die for!
I for one am glad January is here. I love the holidays but by the time it's over I'm just tired. I love the month of January. It's the month of new beginnings. Hubby has to start an insulin resistant diet. My focus for the year will be to cook healthier and incorporate more whole grains into our diet.
Before we started our new healthy diets, I had to make just one meal that was not so healthy. I love fried chicken. I have loved fried chicken since I was a little girl. I have been wanting to try making a gluten free fried chicken for a while now. Tonight was the night!
I soaked some chicken tenders in milk. I dredged them in equal parts of tapioca flour, rice flour, potato starch, salt, seasoned salt and paprika. Carrie (Ginger Lemon Girl), if you will look closely you will see I am frying in an iron skillet. That is thanks to your post on your grandmother's iron skillet. I just had to have one after reading your post. Maybe I'll pass it down to my granddaughter!

It was a very cold day today...like about 5 degrees. Who knows what the wind chill was. I had to have the 3 hour fasting blood sugar test today. I might be in the same boat as my husband! I have had high fasting levels of glucose. It was so cold in the lab and I had to sit there for 3 hours! It was really busy and people kept coming in. Everytime, all this cold wind would blow in. I felt frozen to the bone by the time I got home and needed this comfort food so bad! It really hit the spot.
One more thing I have to mention. The young gluti girl works part time at our church kitchen. When she went in her last day before Christmas, her boss Ruth had left her a goodie bag. God bless Ruth! She had made Kati some gluten free cookies and on her day off to boot. Now you know she had a million other things she probably needed to do rather than figure out how to bake gluten free. That was a real blessing for Kati. Thank you Ruth!

OATMEAL !!!!!!!!
I am a happy girl! Today I received my shipment of Gluten Free Oats!!!! I am so excited. Oatmeal for breakfast, oatmeal cookies, granola, and baked oatmeal!!!
My favorite thing to make for Christmas breakfast is baked oatmeal. I was not sure what I was going to do this year without oatmeal. Problem solved.
Baked Oatmeal
1/2 cup oil
2 eggs
1 cup sugar
3 1/2 cups oats
1/2 teaspoon salt
1 cup milk
Grease a 9 x 13" pan. In a bowl, mix together the oil,eggs and milk. Add sugar, oats, and salt. Bake at 350 degrees for around 40 min or until done.
I usually add 1 teaspoon of cinnamon. You can also add raisins, cranberries, apples, chocolate chips or anything else you can think of.

A well meaning neighbor
The Party
I took some pictures of the party table. Lightings not so good.....it was evening. If you would have told me a year ago that I could have put on a completely gluten free party and the food would still be great, I might not have believed you. Seeing is believing!
I didn't tell anyone it was all gluten free although some already knew it would be. I wanted to see the response first. One of the wives ate some of the Blue Diamond Nut Thin crackers and had a fit over them because she liked them so well. She had no idea they were gluten free. I just had to giggle at that. My little secret!
